The challenge

A Nairobi restaurant group with three dining branches and a central kitchen was using three different till systems — one inherited from a previous owner, one homemade in Excel, one a free POS without KOT printing. Result: kitchen orders were shouted across counters, recipes tracked on paper in the chef’s office, food cost percentage was a quarterly guess, and end-of-day cash never matched the till tape on the first count.

Our approach

• Built the full menu as recipes with ingredient-level BOM — every dish carries its true food cost.
• Configured table management with split-bill and table-transfer support.
• Connected M-PESA STK Push at every till.
• Set up central-kitchen stock transfers between prep facility and dining branches.
• Trained 18 servers, 6 chefs, and 3 managers in a structured 4-hour Saturday session.

Results delivered

• Kitchen order errors dropped 70% — KOT printers eliminated the “what did they say?” problem entirely.
• Real food cost percentage revealed that 3 menu items were running at gross margin under 35% — quietly re-engineered or removed.
• End-of-day cash reconciliation fell from 60-90 minutes to under 10 minutes.
